Dry aging is a slow, dry maturation technique that concentrates flavour and tenderises meat under carefully held temperature and humidity. The extra-wide, four-sided AMC8714L makes in-house maturation a striking centrepiece for steakhouses, butchers and fine-dining rooms, with 600L of space on full display. The triple-glazed, UV-treated glass keeps the meat protected while on show, and the natural R290 refrigerant keeps running costs and environmental impact low.
